Already boasting three Michelin stars, the Osteria Francescana was announced as the World’s Best Restaurant at a ceremony last week in New York. Organised by Restaurant magazine, the award recognises chef Massimo Bottura’s balancing “the demands of heritage while embracing modernity”.
The Osteria Francescana, tucked away on a back street in Modena’s centro storico, has long been a proud flag-waver for the flavours of Emilia-Romagna and is the first Italian restaurant to be awarded the title.
Here is our special Ferrari menu, exclusively created by Bottura in honour of Enzo Ferrari:
Le 5 stagionature del Parmigiano Reggiano
The region’s unique, celebrated cheese, conceived and served at different temperatures and consistencies
Il compromesso storico
Inspired by two traditional recipes, tortellini al brodo and tortellini alla panna; here the pasta is cooked in broth and laid on a bed of cream of Parmigiano Reggiano
Pig’s trotter steamed in Lambrusco. The sauces are not side dishes, but colours to be savoured on the palate
Cyber zuppa inglese
Hot chocolate and crème pâtissière ice cream. A sponge finger is drenched in the crème pâtissière, with a touch of lemon, covered by a film of Alchermes liqueur
For the antipasto – Lambrusco Grasparossa
For the first course – Lambrusco di Sorbara
For the main course – Smoked chestnut beer from the hills around Bologna
